Biographical information provided by Susanna Joe for the He Tohu exhibition:

Ellen Sproule emigrated from Glasgow, Scotland, to New Zealand as a 25-year-old newlywed with her 22-year-old husband Charles, arriving at the port of Otago on 11 October 1873. As Ellen Clarke, she had married Charles in Glasgow a few months earlier in July. In Dunedin Ellen worked as a housekeeper and in other domestic duty jobs, while Charles was employed as a carter. The couple had one son, Thomas Charles. After a long illness, Ellen died at her 23 Harbour Terrace residence on July 16, 1903, aged 55 years.  Ellen is buried in Dunedin’s Northern Cemetery along with her family.

Some records list surname as 'Sproull' or 'Sproul'.
